Julzeys Fruitcake


INGREDIENTS

1kg mixed fruit with peel

300ml orange juice

300ml brandy

1/2 cup demerara sugar

2 cups sr flour

300gm toasted almonds and walnuts

4 eggs

125gm melted butter

1 tsp Bicarbonate of Soda

A pinch of salt

2tbs mixed spice

1 tsp Nutmeg

METHOD

Wash and drain fruit

Soak fruit in juice and brandy for at least 4 hours till fruit is plump

Toast the nuts on the stove till fragrant and add the butter to melt in and add to soaked fruit

Beat eggs, add to fruit and mix well

Mix spices, salt and bicarbonate of soda into the SR Flour then add in 3 parts to fruit mix and mix well.

Put into a large greased square tin or large spring form tin

Preheat oven to 160 degrees centigrade and cook for an hour and a half
