Ingredients
2 Red Capsicums (You could use Yellow or Orange or all Colours available)
2 Green Capsicums
Chilli’s to your taste
2 Red onions
2 Garlic Cloves
2 Tbs Red Wine Vinegar
2 Tbs Coconut Palm Sugar/Panella Sugar (Any sugar but processed sugar from the supermarket)
1 Large Tin of Tomatoes
1/4 Cup of Purified Water
Method
Chop Capsicum and Onion in 2cm pieces
Finely chop Chilli and Garlic
Place ingredients into a large pot with the water to start them off.
Simmer gently till the mixture is just tender
Add Tomatoes and simmer for about 5 min
Turn off the heat and stir in the Sugar and the Red Wine Vinegar till the sugar is dissolved.
This makes quite allot so you could halve the amount of onion, capsicum and use a small tin of Tomatoes, although it will freeze and you can use in the soup recipe that I will write up tomorrow
