Ingredients
1 Cup Whole Red Lentils (Soak Overnight)
2 Tbs Macadamia or Coconut Oil
2 Cloves Garlic
1 Medium Red Onion Diced
3 Tbs Red Curry Powder ( I use Ayam)
2 Cups of Vegie Stock
1 Cup Water if needed
1 400gm Tin Diced Tomatoes
1/4 Cup Coconut Milk
Juice of 1/2 Lime
Toasted Shredded Coconut
Cooked Brown Rice
Method
Drain and Rinse the Lentils Well
Add Oil and Onion and Garlic to the pan and start to fry off
Add Lentils and make sure they are well coated in the oil stirring well
Add Curry Powder and fry off till fragrant
Add the Stock and bring to the boil
Turn heat down and gently simmer till Lentils are tender but not falling apart about 10-20min adding water if necessary
Add Tomatoes and bring back to the boil
Take off the heat and stir through the Coconut Milk and Lime
Top with Toasted Coconut and Serve with Biodynamic Brown Rice (Not too much) and steamed Vegies or add to Vegie Soup for extra flavour
Serves 4-6
