Miso Vegie Soup


Ingredients
200-300gm mixed Vegies
ie Onion,Celery,Cauliflower,Zucchini,Cabbage, Asian Greens etc
2 Tbs Lentils (any variety)
1 Tbs of Shiro Miso
1 Tbs of dried Mixed Sea Vegies(Wakame, Dulse, Nori)
2 Tbs of Shitake Mushroom Powder(ground dried mushrooms)
1-2 Cloves Garlic
Sesame oil 1 Tbs Soy Sauce
500ml Vegie Stock (good quality from health food aisle of coles, not the other general stuff)
100-150gm(Raw Weight) Protein of your choice(see below for suggestions)

Method
*Prepare Vegies by cutting into small pieces
*Rinse Lentils and add to a saucepan with the Stock and Sesame Oil and cook for about 10min
*Add all other ingredients except for the Miso and cook till Lentils and Vegies are Tender adding water if needed
*Add the Sea Vegies and remove from the Heat
*Add Miso and stir through
*Top with 100-150gm(raw weight) of cooked Chicken, Tofu, Tempe, Egg, Fish, Pork, Beef, Prawns or Scallops and serve

Would also be nice with a squeeze of Lemon and some Coriander, or add in a 3Tbs of cooked Wild or Brown Rice

To save time you could pre-cook lentils and then add a couple of Tbs near the end of cooking. Also nice with the Shitake Mushroom Powder removed, it becomes a more clear soup
