Chicken/Turkey with Cauli, Beans and Baba Ganoush


1 Head of Cauliflower cut into large Florets

400-500gm of Green Beans

1 Red Chilli

500gm Chicken Breast/Thigh or Turkey Breast cut into small thin pieces

2Tbs Macadamia oil

1 Qty of Baba Ganoush (see previous Recipe)

4 handfuls of Baby Leaves – Spinach, Rocket and Kale


Steam Cauliflower for about 5min till just starting to soften slightly.

Heat oil to medium temperature and add Chilli and Chicken, brown chicken on both sides

Add Cauliflower, Beans and Baba Ganoush and and simmer for a few more minutes till chicken and cauliflower are just tender adding water to thin out to your desired consistency

Add the Baby Leaves and stir through till just wilted.

Serves 4
